  • 1 medium yellow onion, sliced
  • 8 ounces shiitake mushrooms, sliced

Instructions

  1. Soak the sweet potato noodles in a large bowl filled with warm water for about 30 minutes until pliable but not mushy.
  2. In a large skillet or wok over medium heat, add a splash of sesame oil.
  3. Toss in the julienned carrots, sliced bell peppers, and chopped onions.
  4. Stir-fry the vegetables for about 5-7 minutes until tender but still slightly crisp.
  5. Fold in the sliced shiitake mushrooms and fresh spinach into the skillet.
  6. Cook until the mushrooms are tender and the spinach has wilted down, roughly another 3-4 minutes.
  7. In another pot, bring water to a boil and add the soaked sweet potato noodles.
  8. Cook the noodles according to package instructions, usually around 5 minutes.
  9. Once done, drain the noodles well and rinse under cold water to stop cooking.
  10. Add the drained noodles into your skillet with the vegetables.

Notes

Storage: Store leftover japchae in an airtight container in the refrigerator for up to 3 days. Make sure to let it cool completely before sealing to preserve its texture and flavor.

Reheating: To reheat, gently warm the japchae in a skillet over medium heat, adding a splash of water or sesame oil to prevent sticking. Stir frequently until heated through, about 5-7 minutes.
