Ingredients

Instructions

- Toss in the julienned carrots, sliced bell peppers, and chopped onions.
- Stir-fry the vegetables for about 5-7 minutes until tender but still slightly crisp.
- Fold in the sliced shiitake mushrooms and fresh spinach into the skillet.
- Cook until the mushrooms are tender and the spinach has wilted down, roughly another 3-4 minutes.
- In another pot, bring water to a boil and add the soaked sweet potato noodles.
- Cook the noodles according to package instructions, usually around 5 minutes.
- Once done, drain the noodles well and rinse under cold water to stop cooking.
- Add the drained noodles into your skillet with the vegetables.
