  • 1 bell pepper, red or yellow
  • 1 cucumber, firm
  • 2 tablespoons sriracha
  • 1/2 cup mayonnaise
  • 1 tablespoon sesame oil
  • juice of 1/2 lime
  • 1 teaspoon agar-agar powder

Instructions

  1. Rinse 1 cup of rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice with 2 cups of water and bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover with a lid, and simmer for about 15-20 minutes until all the water is absorbed.
  4. Fluff the rice with a fork before serving.
  5. Slice two chicken breasts into bite-sized pieces.
  6. Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat.
  7. Add the chicken pieces and season lightly with salt and pepper.
  8. Sauté the chicken for approximately 6-8 minutes or until golden brown and cooked through.
  9. In a small bowl, whisk together ½ cup mayonnaise, 2 tablespoons of sriracha, and juice from half a lime.
  10. If desired, sprinkle in about 1 teaspoon of agar-agar powder while stirring vigorously until fully combined.
  11. Dice one bell pepper (red or yellow) into small cubes.

Notes

Storage: Store leftover Bang Bang Chicken Bowl in an airtight container in the refrigerator for up to 3 days. Keep the chicken, rice, and sauce separate to maintain freshness and texture.
