Ingredients

  • Frozen French Fries, crispy variety
  • Cooked Chicken or Turkey, shredded
  • Shredded Cheese, cheese curds preferred
  • Eggs, poached or fried
  • Chicken Broth, for gravy
  • Cornstarch, for thickening
  • Lemon Juice, freshly squeezed
  • Energized Egg Yolks, at room temperature
  • Butter, unsalted, melted and cooled
  • Pepper, freshly cracked
  • Salt, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Spread frozen French fries on a baking sheet lined with parchment paper.
  3. Bake them according to package instructions until they are golden brown and crispy.
  4. About halfway through the baking time, give them a good shake so they crisp evenly.
  5. In a small saucepan over medium heat, combine 1 cup of chicken broth with 1 tablespoon of cornstarch mixed in 2 tablespoons of cold water.
  6. Stir continuously until the mixture thickens slightly (about 3-5 minutes).
  7. Season with salt and pepper, then set aside.
  8. If you're using pre-cooked chicken or turkey, shred it into bite-sized pieces.
  9. If you're starting from scratch, sauté diced chicken in a pan over medium heat until fully cooked (about 7-10 minutes).
  10. Toss it in with your prepared gravy until coated well.
  11. In another bowl, whisk together 3 energized egg yolks and 1 tablespoon of lemon juice until frothy.
  12. Slowly drizzle in melted unsalted butter while continuing to whisk until the sauce is smooth.

Notes

Storage: Store any leftover Breakfast Poutine in an airtight container in the refrigerator for up to 3 days. To maintain the best texture, it’s recommended to store the fries, chicken, and sauce separately, if possible.

Reheating: To reheat, place the poutine in a preheated oven at 350°F (175°C) for about 10-15 minutes, or until heated through. This helps to keep the fries crispy. You can also microwave the components separately, but the fries may lose their crunch.
