  • 1/4 cup buffalo sauce
  • 8 string cheese sticks
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs

Instructions

  1. Clear off a section of your countertop and gather three shallow bowls.
  2. In one bowl, put about half a cup of flour.
  3. In the second bowl, beat two eggs until frothy.
  4. In the third bowl, mix one cup of panko breadcrumbs with a teaspoon of dried herbs and a pinch of salt.
  5. In a large bowl, combine 1 cup of shredded cooked chicken with 1/4 cup of buffalo sauce.
  6. Stir until every piece of chicken is coated in the buffalo sauce.
  7. Take one string cheese stick and carefully wrap about two tablespoons of the buffalo chicken mixture around it.
  8. Make sure the cheese stick is fully covered with the mixture.
  9. Repeat this until you run out of cheese sticks or filling.
  10. Take each covered stick and roll it in flour first.
  11. Dip the floured stick into the beaten eggs, allowing any excess to drip off.
  12. Coat the stick thoroughly in the seasoned panko breadcrumbs, pressing down slightly to ensure they stick.
  13. Place your coated mozzarella sticks on a baking sheet lined with parchment paper.
  14. Pop the baking sheet in the freezer for at least 30 minutes.
  15. Heat oil in a deep skillet over medium heat to about 350°F.
  16. Carefully add your chilled mozzarella sticks in batches, being careful not to overcrowd the skillet.
  17. Fry the mozzarella sticks for about 2-3 minutes until golden.
