Ingredients

Scale
  • pasta, cooked al dente
  • 2 large yellow or sweet onions, sliced
  • chilli oil, to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • fresh herbs (basil or parsley), for garnish

Instructions

  1. Gather all your ingredients.
  2. Chop your onions into thin slices and mince the garlic finely.
  3. Heat two tablespoons of olive oil in a large skillet over medium heat.
  4. Add the sliced onions to the skillet and stir frequently until they turn golden brown and soft, about 15-20 minutes.
  5. If the onions start to stick, add a splash of water.
  6. Once the onions are caramelized, add the minced garlic and stir constantly for about one minute until fragrant.
  7. Bring a pot of salted water to a boil.
  8. Add the pasta to the boiling water and cook according to package directions until al dente.
  9. Reserve about half a cup of pasta water before draining the pasta.
  10. Combine the pasta with the caramelized onions and garlic, adding reserved pasta water as needed to adjust sauce consistency.

Notes

Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. If you anticipate longer storage, consider freezing the caramelized onion mixture separately from the pasta to maintain texture.

Reheating: To reheat, warm the pasta in a skillet over medium heat, adding a splash of water or olive oil to prevent sticking. You can also microwave it in short intervals, stirring frequently, until heated through.

Serving: Serve the pasta garnished with freshly grated Parmesan cheese and a sprinkle of chopped fresh herbs like basil or parsley. Drizzle extra chilli oil on top for added flavor and a bit of heat.

Chef’s Tip: For enhanced flavor, consider adding a splash of balsamic vinegar to the caramelized onions just before adding the garlic. This will add depth and a hint of sweetness that complements the dish beautifully.
