Ingredients

Scale
  • 2 pounds potatoes, peeled and chopped
  • 2 boneless chicken breasts, seasoned
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup whole milk
  • 1 cup frozen mixed vegetables
  • 1 cup grated sharp cheddar cheese

Instructions

  1. Peel and chop 2 pounds of potatoes into evenly-sized chunks (about 1-inch pieces).
  2. Place the chopped potatoes in a large pot filled with cold water and add a pinch of salt.
  3. Bring the pot to a boil over high heat and cook the potatoes until fork-tender—about 15-20 minutes.
  4. Season 2 boneless chicken breasts with salt, pepper, and garlic powder while the potatoes are boiling.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  6. Add the seasoned chicken to the skillet and cook for about 7-8 minutes per side until golden brown and cooked through.
  7. Remove the chicken from heat and let it rest before slicing into bite-sized pieces.
  8. Drain the tender potatoes in a colander and return them to the pot over low heat.
  9. Add 4 tablespoons of butter and ½ cup of milk to the drained potatoes.
  10. Mash the potatoes until creamy and mix in half of your grated cheese for extra flavor.
  11. Add 1 cup of frozen mixed vegetables directly into the hot mashed potatoes.
  12. Stir everything together until well combined and taste-test for seasoning.
  13. Adjust salt if needed.
  14. Spoon generous portions of mashed potato mixture into bowls and top with sliced chicken.

Notes

Storage: To store Chicken Mashed Potato Bowls, allow the dish to cool to room temperature, then transfer it to an airtight container. Refrigerate for up to 3 days. For longer storage, consider freezing the bowls in individual portions; they can last up to 2 months in the freezer.

Reheating: Reheat refrigerated Chicken Mashed Potato Bowls in the microwave on medium power for 2-3 minutes, stirring halfway through to ensure even heating. If frozen, thaw in the refrigerator overnight before reheating, or use the microwave’s defrost setting followed by reheating until hot throughout.

Serving: Serve Chicken Mashed Potato Bowls warm, garnished with additional grated cheddar cheese or fresh herbs for a pop of color and flavor. Consider providing toppings like sour cream or chopped green onions on the side for guests to customize their bowls.

Chef’s Tip: For extra creamy mashed potatoes, use a potato ricer instead of a masher. Additionally, you can elevate the flavor by incorporating roasted garlic or cream cheese into the mashed potatoes for a richer taste.
