Ingredients

Scale
  • 500 g prawns, peeled
  • spaghetti or linguine, for optimal twirling
  • 4 cloves garlic, minced
  • 12 teaspoons red chili flakes, adjust to taste
  • 3 tablespoons olive oil, extra virgin
  • juice from 1 lemon, freshly squeezed
  • fresh parsley, rough chopped

Instructions

  1. Bring a large pot of salted water to a rolling boil.
  2. Add your pasta and cook according to package instructions until al dente.
  3. Reserve half a cup of pasta water before draining.
  4. In a large skillet over medium heat, pour in three tablespoons of olive oil.
  5. Once hot, toss in 4 minced garlic cloves.
  6. Sauté until fragrant but not browned, about 1 minute.
  7. Add 500g peeled prawns straight into the mix.
  8. Cook them for about 3-4 minutes until they turn pink and opaque.
  9. Stir occasionally so they get evenly coated in the garlic.
  10. Sprinkle in 1-2 teaspoons of red chili flakes and freshly cracked black pepper.
  11. Stir well so those fiery flavors infuse every prawn.
  12. Add your drained pasta to the skillet along with half a cup of reserved pasta water and juice from one lemon.

Notes

Storage: To store leftover Chilli Garlic Prawn Pasta, place it in an airtight container and refrigerate for up to 2 days. Make sure to cool it to room temperature before sealing to prevent condensation.

Reheating: Reheat the pasta gently in a skillet over medium heat, adding a splash of olive oil or reserved pasta water to prevent drying out. Stir frequently until heated through, about 5-7 minutes. Alternatively, you can microwave it in short intervals, stirring in between.

Serving: Serve the Chilli Garlic Prawn Pasta hot, garnished with freshly chopped parsley and an extra squeeze of lemon juice. Pair it with a crisp green salad or garlic bread for a complete meal.

Chef’s Tip: For an extra depth of flavor, consider adding a splash of white wine to the skillet after sautéing the garlic. Allow it to reduce slightly before adding the prawns, enhancing the overall taste of the dish.
