  • 2 yellow bell peppers, diced
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons achiote paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup fresh cilantro, chopped
  • salt, to taste
  • pepper, to taste

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. Season chicken pieces generously with salt and pepper.
  3. Heat a large skillet over medium-high heat and add a splash of olive oil.
  4. Add the chicken pieces in a single layer and cook until browned on all sides for about 5-7 minutes.
  5. Remove the chicken from the skillet and set aside.
  6. Add another splash of olive oil to the same skillet if needed.
  7. Toss in chopped onions and minced garlic, and sauté until soft and fragrant for about 3-4 minutes.
  8. Add diced yellow bell peppers to the skillet.
  9. Cook the bell peppers until they soften slightly for around 3 minutes.
  10. Stir in achiote paste and cook for about 1 minute.
