Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast
  • 3/4 cup milk
  • 2 large eggs, room temperature
  • 1/4 cup melted butter, not hot
  • vanilla extract
  • cream cheese, full-fat
  • zest of lemon or orange, finely grated
  • cornstarch
  • coconut oil or vegetable oil, for frying

Instructions

  1. In a large mixing bowl, combine 2 cups of all-purpose flour, 1/4 cup of granulated sugar, and 1 packet of active dry yeast.
  2. In another bowl, heat 3/4 cup of milk until warm (about body temperature).
  3. Gradually add the warm milk to the flour mixture and mix until everything is combined.
  4. Add 2 large eggs (room temperature) and 1/4 cup of melted butter (not hot) into the flour mixture.
  5. Stir until a sticky dough forms.
  6. Transfer your sticky dough onto a floured surface.
  7. Knead the dough gently for about 5-7 minutes until it becomes smooth and elastic.
  8. If needed, gradually add more flour until the dough is no longer sticky but still soft.
  9. Place your kneaded dough in an oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about an hour or until doubled in size.
  10. In another bowl, blend together the filling ingredients.

Notes

Storage: Store cream-filled bomboloni in an airtight container in the refrigerator for up to 3 days. To maintain freshness, it’s best to consume them within the first 1-2 days. If they are unfilled, they can be stored at room temperature for up to 2 days.

Reheating: To reheat bomboloni, place them in a microwave for 10-15 seconds or until warm. For a crispy exterior, heat them in a preheated oven at 350°F (175°C) for about 5-7 minutes. Avoid reheating filled bomboloni in the microwave, as it may make the filling too runny.

Serving: Serve bomboloni dusted with powdered sugar for a classic touch. You can also pair them with a side of chocolate or fruit sauce for dipping. For an extra indulgence, serve warm with a dollop of whipped cream or ice cream on the side.

Chef’s Tip: For a burst of flavor, experiment with different fillings such as pastry cream, fruit jam, or Nutella. Additionally, allow the bomboloni to cool slightly before filling them to prevent the filling from melting or becoming too runny.
