Ingredients

Scale
  • 4 medium-sized potatoes, sliced
  • 3 tablespoons sesame oil
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cloves garlic, minced
  • 1 tablespoon Korean red pepper flakes (Gochugaru)
  • green onions, for garnish

Instructions

  1. Peel and slice four medium-sized potatoes into thin rounds, about 1/4 inch thick.
  2. Rinse the sliced potatoes under cold water to remove excess starch and dry thoroughly using paper towels.
  3. In a large mixing bowl, combine the sliced potatoes with 2 tablespoons of cornstarch, 1 teaspoon of salt, and 1/2 teaspoon of pepper.
  4. Toss until each potato slice is well coated.
  5. Heat a large skillet over medium heat and add 3 tablespoons of sesame oil.
  6. Allow the oil to warm up but not smoke.
  7. Carefully add the seasoned potato slices in a single layer without overcrowding the pan.
  8. Fry for about 5-7 minutes on one side until golden brown and crispy.
  9. Flip the potato slices over using tongs or a spatula to achieve even crispiness on both sides.
  10. Once both sides are crispy, add in three minced garlic cloves and sprinkle about 1 tablespoon of Korean red pepper flakes over the potatoes.
  11. Stir gently to incorporate everything while cooking for another minute until aromatic.

Notes

Storage: Allow the crispy potato dish to cool completely before storing. Place leftovers in an airtight container and refrigerate for up to 3 days. For longer storage, consider freezing the cooked potatoes, although this may affect their crispiness upon reheating.

Reheating: To reheat, place the potatoes in a single layer on a baking sheet and warm them in a preheated oven at 375°F (190°C) for about 10-15 minutes, or until heated through and crispy. Avoid using a microwave, as it will make them soggy.

Serving: Garnish the crispy Korean potato dish with chopped green onions for a burst of color and flavor. Serve it hot as a delightful vegetable side dish during Lunar New Year celebrations, or as part of a larger meal alongside rice and other traditional dishes.

Chef’s Tip: For extra crunch, soak the sliced potatoes in cold water for at least 30 minutes before frying. This helps to remove excess starch and enhances the crispiness of the final dish. Additionally, adjust the amount of Korean red pepper flakes to suit your heat preference.
