Ingredients

Scale
  • 1 lb fresh shrimp, peeled and deveined
  • 1 cup panko breadcrumbs
  • 1 medium lemon, zested
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped cilantro
  • 2 tablespoons lemon juice

Instructions

  1. Finely chop your fresh shrimp into small pieces using a sharp knife and place them in a mixing bowl.
  2. In the same bowl as the chopped shrimp, add panko breadcrumbs, lemon zest, mayonnaise, Dijon mustard, chopped cilantro, and freshly squeezed lemon juice.
  3. Gently fold all ingredients until well combined, being careful not to overmix.
  4. Using your hands, take about two tablespoons of the mixture and shape it into small patties, aiming for about eight patties total.
  5. Place the shaped patties on a parchment-lined baking sheet while you heat up your cooking oil.
  6. In a large skillet over medium heat, add cooking oil.

Notes

Storage: Store any leftover shrimp cakes in an airtight container in the refrigerator for up to 2 days. If you want to make them ahead of time, uncooked patties can be frozen on the baking sheet and then transferred to a freezer-safe container for up to 3 months. Thaw in the refrigerator before cooking.

Reheating: To reheat cooked shrimp cakes, place them in a preheated oven at 350°F (175°C) for about 10-12 minutes, or until heated through. Alternatively, you can reheat them in a skillet over medium heat for about 5 minutes on each side until warm and crispy.

Serving: Serve the shrimp cakes hot, accompanied by the lemon aioli for dipping. They pair well with a fresh salad, coleslaw, or a side of roasted vegetables for a complete meal. Garnish with additional cilantro and lemon wedges for an extra pop of flavor.

Chef’s Tip: For extra flavor, consider adding a pinch of cayenne pepper or some chopped green onions to the shrimp mixture. Additionally, ensure your oil is hot enough before frying to achieve a crispy exterior without absorbing too much oil.
