Ingredients

Scale
  • 2 pounds chicken thighs, cut into bite-sized pieces
  • 1/2 cup soy sauce
  • 1 cup pineapple juice, 100% pure
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon black pepper, freshly cracked
  • 1 lemon, juiced
  • skewers, soaked in water for at least 30 minutes

Instructions

  1. In a large bowl, combine ½ cup soy sauce, 1 cup pineapple juice, ¼ cup brown sugar, 4 cloves minced garlic, 1 tablespoon freshly cracked black pepper, and the juice of one lemon.
  2. Whisk until the sugar dissolves completely.
  3. Cut 2 pounds of chicken thighs into bite-sized pieces.
  4. Add these pieces to the marinade and toss well so each piece is coated.
  5. Cover with plastic wrap and refrigerate for at least one hour or overnight for maximum flavor infusion.
  6. Preheat your outdoor grill to medium-high heat (about 375°F) or heat an indoor grill pan over medium-high heat.
  7. Once marinated, remove the chicken from the fridge.
  8. Thread the chicken pieces onto soaked wooden skewers, aiming for four to five pieces per skewer.
  9. Leave a little space between each piece for even cooking.
  10. Place your assembled skewers on the preheated grill.
  11. Cook for about 6-8 minutes per side or until fully cooked.

Notes

Storage: To store leftover Filipino Pork BBQ skewers, allow them to cool completely before placing them in an airtight container. They can be kept in the refrigerator for up to 3 days or frozen for up to 2 months. If freezing, wrap each skewer tightly in plastic wrap before placing them in a container to prevent freezer burn.

Reheating: When reheating skewers, the best method is to use an oven or stovetop. Preheat the oven to 350°F (175°C) and place the skewers on a baking sheet, covering them with aluminum foil to retain moisture. Heat for about 10-15 minutes. Alternatively, reheat them on a grill or in a skillet over medium heat, turning occasionally until heated through.

Serving: Serve the skewers with a side of steamed rice or a fresh salad for a complete meal. You can also offer dipping sauces like a sweet chili sauce or extra soy sauce with lemon for added flavor. Garnish with chopped green onions or cilantro for a fresh touch.

Chef’s Tip: For enhanced flavor, marinate the chicken thighs overnight instead of just one hour. Additionally, adding chunks of bell peppers or onions to the skewers can provide extra flavor and color, making your dish more visually appealing.
