  • 1 ripe avocado
  • 2 tablespoons lime juice, freshly squeezed
  • 10 cherry tomatoes, halved
  • 1/2 cucumber, chopped
  • 1/4 red onion, thinly sliced
  • 1/2 teaspoon kosher salt

Instructions

  1. Shred or dice about two cups of cooked chicken breast and set it aside in a medium-sized mixing bowl.
  2. Slice one ripe avocado in half, remove the pit, and scoop out the flesh into the bowl with chicken.
  3. Chop half a cucumber into small chunks, halve about ten cherry tomatoes, and finely slice around ¼ of a red onion, then toss all these veggies into the bowl.
  4. Drizzle about two tablespoons of freshly squeezed lime juice over all ingredients.
  5. Sprinkle about ½ teaspoon of kosher salt and freshly cracked pepper over the mixture.
