Ingredients

Scale
  • 8 ounces sweet potato noodles
  • 1 pound boneless, skinless chicken breast, cut into thin strips
  • 2 cups fresh spinach
  • 1 medium carrot, julienned or thinly sliced
  • 1 medium red bell pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • toasted sesame seeds for garnish
  • sliced green onions for garnish

Instructions

  1. Boil water in a pot over high heat.
  2. Add 8 ounces of sweet potato noodles and cook according to package instructions until tender but still chewy, about 6-7 minutes.
  3. Drain and rinse the noodles under cold water to stop cooking and set aside.
  4. In a large skillet or wok over medium-high heat, add 1 tablespoon of sesame oil.
  5. Add the marinated chicken strips and sauté until fully cooked through, about 5-7 minutes, stirring occasionally.
  6. Add sliced carrots, red bell pepper, and fresh spinach to the skillet with the chicken.
  7. Stir-fry everything together for about 3-4 minutes until the veggies are tender yet vibrant.
  8. Add the previously cooked noodles to the skillet.

Notes

Storage: Store leftover Japchae in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the dish in a freezer-safe container for up to 2 months. To maintain the best texture, consider separating the noodles and vegetables before storing.

Reheating: To reheat Japchae, thaw any frozen portions in the refrigerator overnight. Heat in a skillet over medium heat, adding a splash of water or sesame oil to prevent sticking. Stir-fry until heated through, about 5-7 minutes.

Serving: Serve Japchae warm, garnished with toasted sesame seeds and sliced green onions for added flavor and presentation. It can be enjoyed as a main dish or as a side dish accompanying Korean meals.

Chef’s Tip: For added depth of flavor, marinate the chicken in soy sauce, sesame oil, and a pinch of sugar for 15-30 minutes before cooking. This enhances the overall taste of the dish and makes the chicken more tender.
