Ingredients

Scale
  • 2 cucumbers, firm and unblemished
  • 2 cloves garlic, minced finely
  • 1/4 cup rice vinegar, unseasoned
  • 1 tablespoon sugar
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon red pepper flakes
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds, lightly toasted for garnish

Instructions

  1. Thinly slice your cucumbers into rounds or half-moons and place them in a large mixing bowl.
  2. In a separate small bowl, mix together minced garlic, rice vinegar, sugar, sesame oil, and red pepper flakes until well combined.
  3. Pour the garlic mixture over the sliced cucumbers in the large bowl and toss gently until all cucumber slices are evenly coated.
  4. Cover the bowl with plastic wrap or a lid and let it sit in the refrigerator for at least 30 minutes before serving.
  5. Garnish the salad with sliced green onions and toasted sesame seeds before serving.

Notes

Storage: Store the Korean cucumber salad in an airtight container in the refrigerator for up to 3 days. The flavors will continue to deepen over time, but the cucumbers may become slightly softer.

Reheating: This salad is best served cold and does not require reheating. Enjoy it straight from the fridge for a refreshing taste.

Serving: Serve the salad as a side dish alongside grilled meats or rice dishes. It can also be enjoyed as a light appetizer or a refreshing snack on its own.

Chef’s Tip: For extra crunch and flavor, consider adding a tablespoon of salt to the cucumbers before mixing with the dressing. Let them sit for 10-15 minutes to draw out excess moisture, then rinse and proceed with the recipe.
