  • 1 cup bell peppers, chopped
  • 1 medium onion, chopped
  • 1 cup long-grain white or brown rice, rinsed

  • 1 cup corn, frozen or canned, drained
  • 1/4 cup lime juice, freshly squeezed
  • 2 tablespoons taco seasoning
  • 1/4 cup cilantro, leaves only
  • 1 tablespoon agar-agar powder

Instructions

  2. Add diced chicken breast seasoned with salt, pepper, and half of the taco seasoning.
  3. Sauté the chicken for about 5-7 minutes until lightly browned and cooked through at an internal temperature of 165°F.
  4. Stir in chopped onion and bell peppers into the skillet with the chicken.
  5. Cook the onion and bell peppers for another 3-4 minutes until tender but still crisp.
  6. Add rinsed rice and canned black beans (drained) into the skillet.
  7. Pour in 2 cups of water (or broth for extra flavor) along with the remaining taco seasoning.
  8. Stir everything together so it’s well combined before bringing it to a gentle boil.
