  • 1 cup shredded cheddar cheese
  • 4 flour tortillas
  • 1 cup sliced bell peppers
  • 1/4 cup green onions, finely chopped
  • 1 tablespoon olive oil or cooking spray

Instructions

  1. In a mixing bowl, combine shredded cooked chicken, ranch dressing, half of the shredded cheddar cheese, sliced bell peppers, and green onions.
  2. Stir until well mixed.
  3. In a large skillet over medium heat, add a drizzle of olive oil or spray with cooking spray.
  4. Once hot but not smoking, place one tortilla in the skillet.
  5. Evenly spread half of the chicken mixture over one half of the tortilla.
  6. Sprinkle remaining cheddar cheese on top.
  7. Carefully fold the tortilla in half.
  8. Press down gently with a spatula to seal everything inside.
  9. Cook for about 3-4 minutes until golden brown on one side.
  10. Gently flip the quesadilla using your spatula and cook for another 3-4 minutes.

Notes

Storage: Store any leftover quesadillas in an airtight container in the refrigerator for up to 3 days. If you want to keep them longer, consider freezing the cooked quesadillas, wrapped tightly in plastic wrap and then in foil, for up to 2 months.

Reheating: To reheat quesadillas, place them in a skillet over medium heat for about 3-4 minutes on each side until heated through and crispy. Alternatively, you can microwave them for about 1-2 minutes, but this may result in a softer texture.

Serving: Serve the quesadillas hot, cut into wedges, with extra ranch dressing or salsa on the side for dipping. Garnish with additional green onions or chopped cilantro for added freshness and flavor.

Chef’s Tip: For an extra flavor boost, consider adding spices like paprika or cumin to the chicken mixture or incorporating other vegetables such as spinach or mushrooms. Feel free to customize the filling based on your preferences!
