  • 3 tablespoons olive oil, extra virgin
  • 1/4 cup honey, pure and raw
  • 1/2 cup feta cheese, creamy and crumbled
  • 2 tablespoons fresh thyme leaves
  • 1/2 teaspoon black pepper, freshly cracked

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel your sweet potatoes.
  3. Slice the sweet potatoes into rounds about half an inch thick and place them in a large bowl.
  4. Drizzle about three tablespoons of olive oil over the sweet potato rounds.
  5. Sprinkle in some freshly cracked black pepper and toss everything together until each round is lightly coated.
  6. Line a baking sheet with parchment paper and spread the sweet potato rounds in a single layer.
  7. Slide the baking sheet into your preheated oven and roast for about 25-30 minutes.
