Ingredients

Scale
  • 3 Bell Peppers, firm and brightly colored
  • 1 pound Ground Chicken
  • 1/2 cup Buffalo Sauce
  • 4 ounces Cream Cheese, softened
  • 3 Green Onions, chopped
  • 1 cup Shredded Cheese, a blend of cheddar and mozzarella

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. Slice the tops off each bell pepper and remove the seeds and membranes inside.
  3. Place the bell peppers upright in a baking dish.
  4. If the peppers wobble, slice a thin layer off the bottom to create stability.
  5. In a large skillet over medium heat, cook one pound of ground chicken until fully browned, about 5-7 minutes.
  6. Use a spatula to break up any clumps of chicken while cooking.
  7. Once the chicken is cooked through, reduce heat and stir in ½ cup of buffalo sauce and 4 ounces of softened cream cheese until well combined.
  8. Fold in about three chopped green onions along with half of your shredded cheese, about 1 cup, until everything is creamy.
  9. Carefully spoon generous amounts of the spicy chicken mixture into each prepared bell pepper until they are filled to the brim, but do not overstuff.

Notes

Storage: Once cooled, store any leftover stuffed peppers in an airtight container in the refrigerator for up to 3 days. To maintain optimal freshness, wrap them individually in plastic wrap before placing them in the container.

Reheating: To reheat, place the stuffed peppers in a microwave-safe dish and cover with a damp paper towel. Heat on high for 2-3 minutes, or until heated through. Alternatively, reheat in the oven at 350 degrees Fahrenheit (175 degrees Celsius) for about 15-20 minutes until warm.

Serving: Serve the spicy buffalo chicken stuffed peppers hot, garnished with additional chopped green onions or a drizzle of extra buffalo sauce for added flavor. Pair with a side salad or whole grains for a complete meal.

Chef’s Tip: For an extra kick, mix in some diced jalapeños or crushed red pepper flakes into the chicken mixture. If you prefer a milder version, reduce the amount of buffalo sauce or opt for a mild sauce.
