Ingredients

Scale
  • 1 pound boneless chicken breasts
  • 2 tablespoons olive oil
  • juice from 2 limes
  • 3 cloves garlic, minced
  • 2 jalapeños, chopped (seeds removed if desired)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • fresh cilantro, for garnish (optional)

Instructions

  1. In a large bowl, combine 1 pound of boneless chicken breasts with 2 tablespoons of olive oil, juice from 2 limes, 3 minced garlic cloves, 2 chopped jalapeños, 1 teaspoon of salt, and ½ teaspoon of black pepper.
  2. Mix thoroughly until all pieces are well coated in the marinade.
  3. Cover with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Remove the chicken from the marinade once the grill is hot enough.
  6. Place each piece on the grill and cook for about 6-7 minutes per side or until they reach an internal temperature of 165°F (74°C).
  7. Transfer the chicken to a cutting board and let it rest for about five minutes.
  8. Slice your grilled chicken and serve.

Notes

Storage: After cooking, allow the Spicy Jalapeño Chicken to cool completely before transferring it to an airtight container. It can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. For best results, slice the chicken before freezing to make reheating easier.

Reheating: To reheat, thaw frozen chicken in the refrigerator overnight. You can then warm it in a preheated oven at 350°F (175°C) for about 10-15 minutes, or until heated through. Alternatively, reheat in a skillet over medium heat for about 5-7 minutes, flipping to ensure even heating.

Serving: Serve the Spicy Jalapeño Chicken sliced, garnished with fresh cilantro for a pop of color and flavor. It pairs well with rice, tortillas, or a fresh salad. Consider adding lime wedges on the side for an extra zesty kick.

Chef’s Tip: For an extra layer of flavor, marinate the chicken overnight if time allows. This will enhance the taste and tenderness. Additionally, feel free to adjust the number of jalapeños based on your spice preference, or add a pinch of cayenne pepper for more heat!
