Ingredients

Scale
  • 1 cup fresh pineapple, chopped
  • 24 habanero peppers, chopped (adjust for spice level)
  • 1 head garlic, roasted
  • 1/2 cup white vinegar
  • 1/4 teaspoon salt (or to taste)
  • 1/4 cup lime juice, freshly squeezed
  • 1/4 cup cilantro, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice off the top of a head of garlic and drizzle with olive oil.
  3. Wrap the garlic in foil and roast until golden brown and fragrant, about 30 minutes.
  4. While the garlic roasts, peel and core one cup of fresh pineapple.
  5. Chop the pineapple into small pieces to ensure even blending later.
  6. In a pan over medium heat, add chopped habaneros with just enough oil to coat them lightly.
  7. Sauté the habaneros for about 3-5 minutes until they become fragrant but not burnt.
  8. In a blender or food processor, combine roasted garlic cloves, sautéed habaneros, prepared pineapple chunks, white vinegar, lime juice, and salt.
  9. Blend the ingredients until smooth.
  10. Taste your hot sauce after blending and adjust salt or lime juice as needed.
  11. Transfer your sauce into sterilized bottles or jars.
  12. Let the sauce cool to room temperature before sealing.
  13. Refrigerate the sauce for at least two hours or overnight to allow flavors to meld together.

Notes

Storage: Store the Spicy Pineapple Habanero Hot Sauce in sterilized bottles or jars in the refrigerator. It can last for up to 2-3 weeks. For longer storage, consider freezing the sauce in ice cube trays for easy portioning.

Reheating: This hot sauce is best enjoyed cold or at room temperature. If you prefer a warm sauce, gently heat it in a saucepan over low heat, stirring occasionally to avoid burning.

Serving: Drizzle the hot sauce over grilled meats, seafood, or tacos for an extra kick. It also pairs well with fried foods, or as a zesty addition to marinades and dressings.

Chef’s Tip: For a milder sauce, remove the seeds and membranes from the habanero peppers before sautéing. You can also add more pineapple or a splash of honey to balance the heat if desired.
