Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 fresh jalapenos, chopped
  • 2 green onions, chopped
  • 1/2 teaspoon garlic powder
  • egg roll wrappers
  • cooking oil, for frying

Instructions

  1. In a medium bowl, combine 8 ounces of softened cream cheese, 1 cup of shredded cheddar cheese, 2 chopped fresh jalapenos (seeds removed), 2 chopped green onions, and ½ teaspoon of garlic powder.
  2. Mix everything together until smooth and well combined.
  3. Lay an egg roll wrapper on a clean surface with one corner pointing towards you.
  4. Place about 2 tablespoons of filling in the center of the wrapper.
  5. Fold up the bottom corner over the filling tightly.
  6. Fold in both side corners towards the center.
  7. Roll away from you until it resembles a burrito.
  8. Use a dab of water to seal the top edge.
  9. In a deep skillet or pot, pour enough cooking oil (about 2 inches deep) for frying and heat it over medium-high heat until it reaches approximately 350°F (175°C).

Notes

Storage: To store leftover mini jalapeno popper egg rolls, place them in an airtight container and refrigerate for up to 3 days. For longer storage, freeze the uncooked, assembled egg rolls in a single layer on a baking sheet before transferring them to a freezer-safe bag, where they can be kept for up to 2 months.

Reheating: For best results, reheat refrigerated egg rolls in an oven preheated to 350°F (175°C) for about 10-15 minutes, or until heated through and crispy. If reheating from frozen, bake directly from the freezer for about 15-20 minutes, checking for doneness.

Serving: Serve the mini jalapeno popper egg rolls warm, accompanied by dipping sauces such as ranch, sour cream, or a spicy aioli for added flavor. Garnish with chopped green onions or cilantro for a fresh touch.

Chef’s Tip: For extra flavor and a kick, consider adding cooked bacon bits or a splash of hot sauce to the cream cheese mixture. Additionally, ensure the oil is hot enough before frying to achieve a crispy exterior and prevent the egg rolls from absorbing too much oil.
