Notes
Storage: Allow the Tasty Maple Dijon Chicken & Sweet Potato Bowls to cool completely before transferring them to airtight containers. Store in the refrigerator for up to 4 days. For longer storage, you can freeze the chicken and sweet potatoes separately in freezer-safe containers for up to 3 months.
Reheating: To reheat, thaw frozen chicken and sweet potatoes in the refrigerator overnight. Warm them in the microwave or in a skillet over medium heat until heated through. You can also reheat in the oven at 350°F (175°C) for about 15-20 minutes for a crispy texture.
Serving: Serve the bowls by layering roasted sweet potatoes, sliced maple Dijon chicken, and optional broccoli florets. Drizzle any remaining marinade over the top for extra flavor, and finish with a sprinkle of flaky sea salt and freshly ground black pepper.
Chef’s Tip: For added depth of flavor, consider marinating the chicken for a longer period, up to 2 hours, or overnight if time permits. This will enhance the taste and tenderness of the chicken. Additionally, feel free to add other roasted vegetables to the bowl for more variety and nutrition.
