  • 2 medium sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • ¼ cup Dijon mustard
  • ¼ cup pure maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • salt to taste

  • 2 boneless skinless chicken breasts
  • flaky sea salt
  • freshly ground black pepper
  • broccoli florets (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube two medium sweet potatoes into bite-sized pieces.
  3. Toss the sweet potatoes in a bowl with 1 tablespoon of olive oil, salt, and pepper until they're well coated.
  4. Spread the sweet potatoes out on a baking sheet lined with parchment paper.
  5. Roast the sweet potatoes in the oven for about 25-30 minutes or until they're tender and lightly caramelized.
  6. In a mixing bowl, combine ¼ cup of Dijon mustard, ¼ cup of pure maple syrup, 1 tablespoon of olive oil, 1 teaspoon of garlic powder, salt, and pepper to taste.
  7. Add two boneless chicken breasts to the marinade, ensuring they are fully coated.
  8. Cover and let the chicken marinate in the refrigerator for at least 15 minutes while the sweet potatoes are roasting.
  9. Remove the marinated chicken from the fridge after the sweet potatoes have been in the oven for about 15 minutes.
  10. In a sauté pan over medium heat, add a drizzle of olive oil.
  11. Once hot, place the chicken breasts in the pan and cook for about 6-7 minutes on each side.
