  • 3 tablespoons Thai red curry paste
  • 1 cup full-fat coconut milk
  • 1 tablespoon honey
  • fresh lime juice, to taste
  • chopped peanuts, for topping
  • fresh cilantro, for topping

Instructions

  1. Cut 1 pound of chicken breast into bite-sized cubes.
  2. Pat the chicken cubes dry with paper towels.
  3. In a bowl, combine 3 tablespoons of Thai red curry paste with 1 cup of coconut milk and 1 tablespoon of honey.
  4. Mix the marinade well until fully combined.
  5. Toss in the chicken cubes, ensuring they are completely coated in the marinade.
  6. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.
  7. Preheat your oven to 400°F (200°C).
  8. Line a baking sheet with parchment paper.
  9. Arrange the marinated chicken pieces on the prepared baking sheet in a single layer.
  10. Bake in the preheated oven for about 20-25 minutes or until golden brown and the internal temperature reaches 165°F (75°C).
  11. Flip the chicken halfway through cooking for even crispiness.
  12. Once baked, remove the chicken from the oven and drizzle with fresh lime juice.
  13. Top generously with chopped peanuts and roughly chopped cilantro.
