Ingredients

Scale
  • 1 pound ground chicken, lean
  • 2 cups broccoli florets, fresh
  • 3 cloves garlic, freshly minced
  • 1 small piece ginger, fresh
  • 2 tablespoons soy sauce, low-sodium
  • 1 tablespoon sesame oil, toasted
  • 1 tablespoon cornstarch
  • 3 tablespoons chicken broth, low-sodium
  • 2 green onions, sliced thinly

Instructions

  1. Wash the broccoli and cut it into bite-sized florets.
  2. Mince the garlic and ginger finely.
  3. In a large skillet or wok over medium-high heat, add one tablespoon of sesame oil.
  4. Wait until the oil is shimmering before adding the ground chicken.
  5. Cook the ground chicken until browned, stirring occasionally for about 5-7 minutes.
  6. Once the chicken is cooked through, toss in the minced garlic and ginger.
  7. Stir constantly for about 30 seconds until the garlic and ginger become fragrant.
  8. Add the broccoli florets to the skillet along with three tablespoons of chicken broth and two tablespoons of soy sauce.
  9. Cover the skillet with a lid or plate and steam the broccoli for about 3-4 minutes.
  10. In a small bowl, mix one tablespoon of cornstarch with two tablespoons of water until smooth.
  11. Pour the cornstarch mixture into the skillet while stirring.
  12. Let it cook for another minute until the sauce is thickened.

Notes

Storage: Allow the stir fry to cool completely before transferring it to an airtight container. Store in the refrigerator for up to 3 days. For longer storage, freeze the stir fry in a freezer-safe container for up to 3 months. Thaw in the refrigerator before reheating.

Reheating: To reheat, microwave the stir fry in a covered dish for 2-3 minutes, stirring halfway through, until heated through. Alternatively, you can reheat it in a skillet over medium heat, adding a splash of chicken broth to prevent it from drying out.

Serving: Serve the quick ground chicken and broccoli stir fry over cooked rice or quinoa for a complete meal. Garnish with additional sliced green onions or sesame seeds for added flavor and presentation.

Chef’s Tip: For extra flavor, marinate the ground chicken in soy sauce and a bit of ginger before cooking. This enhances the taste and ensures the chicken is well-seasoned throughout the dish.
